Blueberry Pie

This is one of my very favorite pies. To prove that it just isn't that hard, I enlisted the help of my 12 year old niece.

Have an unbaked pie shell waiting in the refrigerator. Since there will be a wonderful crumb topping (which I invented all by my ownself) I will sometimes, in the interest of ease and convenience, use a frozen pastry sheet for this.

INGREDIENTS Pie Filling

6 cups blueberries
1/3 cup all purpose flour
2 teaspoons grated lemon zest
1 tablespoon lemon juice

INGREDIENTS Crumb Topping

2/3 cup packed brown sugar
3/4 cup rolled (NOT INSTANT OR QUICK) oats
1/2 cup whole wheat flour
1/2 teaspoon ground cinnamon
6 tablespoons unsalted butter, softened

With the blueberries washed and in a bowl, add the rest of the ingredients to them.

When you squeeze the lemon juice (tell me you weren't thinking of using reconstituted shit out of a bottle, fucking lie to me, but tell me that) be sure to have a strainer to catch the seeds. Seeds in pie = BAD.

Toss it all together gently, and allow to rest a bit while you mix the crumb topping.

Dump all the topping stuff into a bowl and moosh it up with your hands until it is well mixed and crumbles into pea sized little nuggets. Bake at 350° for one hour. I usually do the baking on a stone that I put in the oven when I'm preheating it. It makes for a firmer set on the bottom crust and helps ensure an even bake.

Cool on a rack at least two hours to allow the filling to thicken and set.

One of my girls' favorite games is to cook dinner in a pretend kitchen for the family. We tend to eat too much pretend pizza and birthday cake. I can't wait until they're as old as your niece so that they can do some real cooking for us.

Yesterday I made blueberry milkshakes. Even easier!
